Recipe Name: Mike’s Favorite Salad
Serves: 8

Ingredients

Fresh Baby Spinach
Red Apples
Craisins
Mandarin Oranges (drained)
Candied Pecans (recipe follows)
Crumbled Feta Cheese
one egg white
1 pound of pecan halves
1 cup sugar
1 teaspoon cinnamon
1 teaspoon salt
1 Tablespoon Poppyseeds
1/2 cup white sugar
1/4 teaspoon paprika
1 teaspoon salt
1/4 white wine vinegar
1/4 apple cider vinegar
1 cup olive oil

Instructions

Mix the spinach with the dressing (recipe follows) – just enough dressing to make the leaves wet & shiny.
Top the leaves with the remaining ingredients (chop apples coarse/chopped with the Feta being last on top.

To make the Candied Pecans:

Mix at high speed one egg white till soft peaks forms.
Mix into the egg white – 1 pound of pecan halves
In a separate bowl combine –
1 cup sugar
1 teaspoon cinnamon
1 teaspoon salt

Pour the sugar mixture over the coated pecans and mix.
Grease (pan spray) a cookie sheet and spread the pecan mixture.
Bake at 250 for 1 hour. Turn the mixture every 20 minutes.
These candied pecans are good all on there on as a treat set out before or after dinner. They will make your house smell wonderful!

Poppyseed Dressing (Some prefer not to even add the poppyseeds to their dressing):

1 Tablespoon Poppyseeds
1/2 cup white sugar
1/4 teaspoon paprika
1teaspoon salt
1/4 white wine vinegar
1/4 apple cider vinegar
1 cup olive oil

Put all ingredients except the olive oil in a blender or food processor and blend for 20 seconds. Then slowly add the olive oil to this mixture and continue blending for approx. 3 minutes.
If you need a quick dressing – you can buy LeMartinique Poppyseed Dressing or Golding Farms Raspberry Walnut Dressing (I found this dressing at Wal Mart) – either of these dressings can be used as a substitute for making the Poppyseed Dressing.
